Receipe Yield: 2-3 servings
I love sabudana Khichdi. Its also the food you can have during fasting. At my home my mom use to prepare this when we used to fast during Navratri which is 9 days during durga puja. You can also serve this as a snack in the evening with a cup of tea.
2 cups Sabudana/Sago seeds
1 large idaho potato, peeled and cut in thin slices/cubes
1 green chillies, chopped
9-10 curry leaves
1 cup peanut roasted peeled and crushed into small bite sized pieces and some powdered.
1 cup coriander leaves
3 tablespoons olive oil
Salt to taste
Soak sabudana/sago seeds in water. Drain the water and keep it aside for half an hour.
Heat oil in a pan over medium heat. Add the potatoes and cook until golden brown. Add green chillies in between cooking the potatoes.
Now add the peanuts and curry leaves to the pan, stir the same.
Add the soaked sabudana/sago seeds into the pan and cook for sometime uncovered.Also, add salt to the taste. Cook until its lightly brown and check the sabudana by pressing one grain between the thumb and forefinger. It should not be hard in the center. If its hard in the center add couple of tablespoons of water and stir continuously while cooking.
Sprinkle coriander leaves and serve hot.
P.S: If you are using this for the fast, omit the salt if you want.
