I usually prepare this dish when i have some left over rice in the fridge. This is really fast way to lighten up the left over rice and serve in decorative way.
2 CUPS cooked basmati rice
1/3 cup slightly roasted peanuts and cashews in oil
1 lemon for juice
1 green chilli, finely chopped
1 small red onion, thinly sliced
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 Tablespoon oil
6-7 curry leaves
salt to taste
coriander leaves to garnish
To the cooked rice, add lemon juice and keep it aside.
Heat oil in a pan, add mustard seeds and wait until it gets splutter.
Add the onion and green chillies, cook it for 3-4 minutes, add turmeric powder, curry leaves, salt, roasted peanuts,cashews and stir.
Add rice to the pan and mix well with other ingredients, so that the rice gets the color from turmeric.
Garnish with chopped green coriander leaves and serve.
