Spicy and sweet Tomato chutney

My mom used to make this chutney which is very simple and delicious.  Whenever there is ripen tomatoes lying in the fridge this recipe is perfect to make use of them. I usually serve this with any kind of stuffed paratha so that it balances the flavor with the spiciness of the paratha.

Sweet and Spicy Tomato chutney

 

INGREDIENTS:
 
  • 4 Tomatoes, roughly chopped
  • 1 tablespoon cumin seeds
  • 6 Tablespoon sugar( you can adjust the sweetness by your taste)
  • 1/2 teaspoon salt
  • 1 teaspoon red chilli powder
  • 1 teaspoon oil
  • 2 dried red chillies

For garnish

  • 1 tablespoon cumin seeds

PREPARATION:

  • Wash and roughly chopped the tomatoes.
  • Heat oil in a pan over medium heat, add cumin seeds and let it get brown.
  • Add chopped tomatoes and cook uncovered for about 5 minutes, as the quantity of tomatoes is reduced add sugar, salt, red chilli powder and stir well.
  • Cover the pan and cook for about 5 minutes more.
  • Meanwhile roast cumin seeds in another pan, just till you get the aroma of the spice.
  • Put the roasted cumin seeds on cutting board and with the help of rolling-pin roughly crush them.
  • Sprinkle the roasted powdered cumin seeds on the tomato chutney.
