I know this place has been quiet for long time now. It’s high time I should post something and make my blog alive. So, cheers to my  first post of 2013, hope to bring lots of new and delicious recipes in coming months.

Growing up, breakfast in our house used to be an elaborate affair everyday. Till now the tradition continues. But after moving to US my vision towards breakfast has totally changed.

On weekdays, breakfast is mostly granola, cereal, an egg or oat meal but on weekends I love to cook something special like pancakes, french toast, omelette or any Indian breakfast. I love weekend breakfast especially because I can sit down with my family and eat something yummy.

I had made this pancakes couple of weekends ago and thought of sharing the recipe here.These pancakes were incredible – so thick and fluffy and truly delicious. And these are easy to make too, with the ingredients from your pantry.In my opinion that’s bonus, right? And the only thing that could possibly make this breakfast even better would be tons of maple syrup on top and yes some fresh fruits too..! So, make this for your loved ones and they will love you more.

Pancakes

Ingredients:

  • 2 cups milk
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 4 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 3 tablespoons unsalted butter, melted and cooled slightly
  • 2 teaspoons vegetable oil

Method:

  • Whisk the lemon juice and milk together in a measuring cup. Set aside while you prepare the other ingredients. (Alternatively, you can use 2 cups of buttermilk in place of the milk/lemon juice.)
  • In a medium bowl, whisk the flour, sugar, baking powder, baking soda and salt together. Add the egg and melted butter to the milk and whisk to combine. Add the dry ingredients to the wet and whisk gently just until combined (the batter will be lumpy, that’s fine).
  • Heat 1 teaspoon of the oil in a cast iron skillet set over medium heat. Once the oil starts shimmering, use paper towels to wipe the pan so only a thin, even coating of oil covers the bottom and sides. Use a 1/4 cup measure to pour the batter into the skillet. Cook on the first side until the edges are set and bubbles form on the surface, about 2 minutes. Use a spatula to flip the pancakes and cook for 1-2 minutes on the second side, or until golden brown and cooked through. Repeat with remaining batter, wiping the skillet with the paper towel(dipped in oil) after each pancakes.
  • Repeat with the remaining batter. You can keep the finished pancakes on a heat-proof plate in the oven at 150°F.
  • Serve them stacked high with maple syrup and fruit of your choice. Enjoy!

I can eat this fruit for breakfast, lunch and dinner everyday. And still can’t get enough of it. I was thinking to make something with mangoes for breakfast and then thought of making this amazing parfait. Parfait is such a simple yet amazingly delicious treat. And you can make this gorgeous little goodness in no time. Have this for your breakfast or as a mid-day snack or as a dessert, it always perfect and stunning! Don’t you agree with me??

Ingredients:

In a small bowl or clear glass, layer yogurt and mango puree. Sprinkle granola generously on top . Serve immediately.

Misal Pav

I remember having Misal-Pav in our office canteen. In Mumbai most people travel at least 1 to 2 hours to office everyday, so it is obvious that not everybody is going to have breakfast at home first thing in the morning. Breakfast menu’s in office canteens like misal-pav, vada pav, idli-sambhar to name a few are very popular. Since, I lived very close to office, I would skip breakfast at home to have Misal-Pav in office.

Misal Pav is another popular breakfast dish in Mumbai. Misal literally means mixture and this dish is a mix of sprouts(dried peas, moth beans and moong beans) which is cooked in onion-tomato-coconut gravy and topped with chopped onion and Farsan or mixture( which is again a  mixture of dried spicy gram flour noodles, roasted peanuts, roasted channa dal). And it is served with none other than our famous pav(bread).There are different versions of Misal like Bombay Misal, Puneri Misal and Kolhapuri. This is my version to the dish. We had this for dinner yesterday night with fresh baked pav bread.

Ingredients:

  • 2 1/2 cups mixed sprout legumes
  • 1 medium onion, chopped
  • 1 tbsp ginger-garlic paste
  • 1 large tomato, chopped
  • 2 tbsp crushed tomatoes
  • 4 green chillies, seeds removed
  • 1/2 tsp fennel seeds
  • 1/4 tsp asfetodia powder
  • 1 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala powder
  • 3 tbsp shredded fresh/frozen coconut flakes
  • salt to taste
  • coriander leaves for garnishing
  • chopped onions for garnishing
  • lime/lemon quarters for garnishing
  • farsan/Sev/mixture
  • 2 tbsp plus 1 tsp light olive oil/vegetable oil

Method:

  • To start with boil the mixed sprouts in pressure cooker for 1 whistles Or until tender. Strain the sprouts and reserve the liquid. Keep it aside.
  • Heat a tsp of oil, add chopped onions and sauté until light brown in color, add fennel seeds, green chillies, ginger-garlic paste and shredded coconut and fry for 2-3 minutes. Once done add chopped tomatoes, crushed tomatoes and grind the mixture into a fine paste.
  • In another pan, heat 2 tbsp oil, add asafoetida powder and add the masala paste followed by turmeric powder, coriander powder, garam masala powder, salt to taste and cook for 5-6 minutes.
  • Add the reserved liquid(for me it was 1 cup), water( I have added 1 cup) and add boiled sprout to the masala.Check for seasoning.
  • Cover the lid and boil for 5-6 more minutes on low-medium heat.
  • The gravy is ready to savored with pav bread.

Assembing the Misal Pav:

  • Take a large serving bowl , add two big ladle full of gravy in the bowl, topped with chopped onions, mixrure/farsan and coriander leaves. Not to forget the lime/lemon wedge. Serve it with pav. And serve your misal-pav piping hot. Enjoy!!

Note:

For sprouting the legumes, soak them overnight. Next day, wash and drain them with water and tie in muslin cloth or cotton kitchen towel. Keep it under a heavy bottom dish in a kitchen closet. The next day you will have beautiful and perfect sprouted legumes ready.

I love muffins. They are so easy to make and perfect for breakfast or snacking in between. Its been a while since I made muffins at home. Every week during our grocery shopping, I was getting some Whole Wheat Chocolate Chip Muffins from Wegmans. Finally yesterday I thought to bake some at home. I am glad i did because these muffins are light, flavorful and delicious. And the best part of these muffins is that they are not too sweet, the way I wanted. I love these muffins with a cup of tea.

Ingredients: 

  • 2 cups white whole wheat flour
  • 2 extra large eggs, at room temperature
  • 3 large ripe bananas, mashed
  • 1/2 cup packed brown sugar
  • 1/3 cup light olive oil
  • 1/2 cup 2% milk
  • 1 tbsp vanilla extract
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Method:

  • Preheat the oven to 375 degrees Fahrenheit and place liners in a muffin pan.
  • Sift together the flour, baking powder, salt and sugar in a large bowl. Then add the chocolate chips to the flour mixture.
  • In another mixing bowl, blend the bananas on low speed  for 3-5 minutes until well mashed.
  • Add the oil, milk, eggs, and vanilla and mix again on low speed for 1 minute until combined.
  • Add the dry ingredients to the banana mixture and combine until just blended. Don’t over mix the batter.
  • Divide batter equally among muffin cups, filling about 3/4 full.
  • Bake muffins 20-25 minutes, until tops are starting to brown and a toothpick inserted comes out clean.
  • Remove pan from oven and let cool on a rack for 5-20 minutes then remove muffins to a rack to cool to room temperature.

Time to post another fruit smoothie. I just love-making smoothies. There are so many different fruits combos that you can try, there’s no way you could ever get bored with them! It’s a great way to start the morning and at the same time it’s so healthy and nutritious for you. Just throw in some fresh or frozen fruits in blender and whip up a nice, totally fresh and delicious smoothie for yourself; paired with a granola bar and you are good till lunch. Here’s what I did to make this smoothie.

Ingredients:

  • 1 cup  pineapple juice
  • 1 cup ice
  • 1 banana, peeled and cut in big chunks
  • 1 cup diced mango
  • 1/2 tsp grated ginger

Combine all ingredients in a blender and mix until smooth and well-blended. Enjoy!

After my homemade granola success, I was in a mood to try my hands on some chewy, nutritious granola bars. I often want a breakfast that’s healthy and filling. But these are not just for breakfast or for a brunch , I enjoyed many of these bars with a cup of tea for my evening snack. These granola bars are perfect treat to take along when going for a bike riding or for a long walk. No doubt this is delicious and healthy treat to devour without even feeling guilty.

Hubby and I are OBSESSED like, a box a week obsessed with Kashi Cherry Dark Chocolate Chewy Granola Bars.  So, I wanted to have a homemade alternative. Again, like homemade granola this recipe is so easy to make. Plus you can customize it according to your liking. And homemade is the best way, right? So, go ahead and try this tasty, healthy treat for yourself…

Ingredients:

  • 1 cup old-fashioned oats
  • 1 cup whole almonds
  • 1 cup walnuts
  • 1 cup dried cranberries
  • 2 tbsp sesame seeds
  • 2 tbsp sunflower seeds
  • 2 tbsp pumpkin seeds
  • 1/2  cup honey
  • 3 tablespoon coconut oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 tbsp mini chocolate chips
  • pinch of cinnamon

Method:

  • Start with 1/2 cup of almonds, walnuts and old-fashioned oats and dump everything into a food processor and process the ingredients until they are coarsely ground. Be careful not to powdered the ingredients, we need small bite sizes pieces which make the bars more dense and help them stick together.
  • Roughly chop the remaining nuts, then mix all these with the above mixture.
  • Add remaining old-fashioned oats, cranberries, pumpkin seeds, sunflower seeds and sesame seeds, then mix well and set aside.
  • In a medium saucepan, combine coconut oil, honey, salt, vanilla & almond extracts, and cinnamon. Bring the mixture to a boil over medium high heat, about 2 minutes. Remove the saucepan from the heat and pour over nut mixture and stir well.
  • Transfer the granola mixture to a greased 9 by 9-inch baking dish lined with plastic wrap (cling foil) hanging to the sides and press firmly to evenly fill. Gently press the chocolate chips onto the top of the granola. Let the granola mixture set in the refrigerator until firm, about 2 to 3 hours minimum, or a day before cutting into squares(or desired shapes).
  • Wrap individual granola bars in cling foil and store in refrigerator. Have this for breakfast with a glass of smoothie or as a snack. Enjoy!

Hi everyone…I am glad to be back blogging, I hope you’ll are doing well, I am doing good too.

Let me start with saying this – Why didn’t I did this earlier?. Seriously this the first thing came in my mind after trying out this homemade granola. It’s delicious and so easy to make that you will never go back to the boxed cereal. It was my first time making granola and I’ll be sure to do it again.  This homemade granola is that good and ADDICTIVE! This homemade granola is a wonderful mixture of grains, nuts, fruits and hint of chocolate.

Don’t feel intimidated by the long list of ingredients, it is all just measure, mix and bake and the delicious results are very well worth. It’s also a fun recipe for kids to help measure and mix. On top of that what I like the most is you can substitute whatever ingredients you like… the kind of flavor you want to add (or not add), and which ingredients you have on hand.

I love this in a bowl of yogurt and some berries on top. On the other hand hubby likes to have this with cold milk or just as a snack. And to my little one he loves to pick all the cranberries and chocolate chips when he sees the jar open…:)

Ingredients

  • 2 ½ cups old-fashioned rolled oats
  • ½ cup slivered almonds
  • ½ cup coarsely chopped walnuts
  • 2 tbsp unsalted sunflower seeds
  • 2 tbsp unsalted pumpkin seeds
  • 2 tablespoons sesame seeds
  • ½ teaspoon cinnamon
  • ⅛ teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/3 cup light olive oil, vegetable oil,or canola oil
  • ½ cup plus 2 tablespoons honey
  • 1 cup dried fruits (such as cranberries, cherries, chopped apricots, etc.)
  • 1/2 cup mini chocolate chips(I have used both white and dark chocolate)

Directions:

  • Preheat oven to 325 degrees. Line a baking sheet with aluminum foil.
  •  Combine oats, almonds, walnuts, sunflower seeds, pumpkin seeds, sesame seeds, cinnamon and salt in a large bowl and mix.
  •  In a small bowl, whisk honey, oil and vanilla extract together until combined. Pour over dry ingredients and mix well. Spread mixture evenly onto prepared baking sheet and bake for about 20-25 minutes, stirring and re-spreading a few times with a spatula, until entire mixture is medium golden brown. Watch carefully, it burns quickly and will brown first in the corners and on the bottom.
  •  Remove the granola from the oven and allow to cool on wire rack, stirring occasionally.
  • Add the apricots, cranberries, cherries and the chocolate chips.
  • Store the cooled  granola in an airtight container in refrigerator. It will keep for several weeks. Enjoy!!
